The Verdict Is in the Second Helping

Hunger flatters the first bowl; only the refill tells you what the cook actually did.

29 August 2026

A first bowl is a stranger at a party: charming, loud, impossible to judge. Hunger does half the cooking, novelty the rest — the crackle of chili crisp, the steam on your glasses, the animal pleasure of being fed. Anything competent tastes like genius when you're starving.

Ladle a second, and the flattery drains away. Now the salt steps forward and won't sit down. Now you notice the broth is thin beneath all that garlic, that the pork fat has gone waxy as it cooled, that the seasoning was a trick played once and unrepeatable. Or — if the cook was honest — the opposite: the noodles still have spine, the sourness keeps pulling you back, and the third bowl starts to seem reasonable.

That's the only test I trust. Not whether they cleared the first plate, because they always do. Whether they went back, and whether they were glad they did.
