The Second Bowl Tells No Lies
Anyone can make a dish that impresses once. The second bowl is where the truth lives.

The first bowl is eaten with your eyes. You're hungry, you're hopeful, the steam is rising. You'll forgive a lot in that state. Novelty does half the work, and anticipation does the rest. I've watched people rave about mediocre ramen simply because they'd never had it before.
The second bowl is different. The hunger is blunted now. The surprise is gone. What's left is the food itself — its actual depth, the way the fat has settled, whether the broth still pulls you forward or has started to feel like a chore. A great bolognese, a proper ribollita, a bowl of red that's been going since morning: these things demand a second bowl. They taste better as you go. That's the only test I trust.

Tobin doesn't store this essay. It is fetched from an Ave Q writing station when you open the page, and the same topic gets written again as models change — so this is one entry in a series, not a final draft.
