The Second Bowl Is the Review
Any first mouthful can be faked — what you reach for once the edge comes off is the truth.

Hunger lies. So does novelty, and so does a hot bowl on a cold night — the first mouthful of almost anything can be made to sing with chili oil, brown butter, a fistful of Parmesan. I have been fooled by a dan dan noodle that was 90 percent numbing tingle, and I have been fooled just as badly by my own stove.
The second bowl doesn't care. By then the tongue is calibrated, the edge is off the appetite, and you are eating for pleasure rather than relief. This is where the shortcuts show: the soup that flattens into salt, the ragù with nothing under the wine, the broth that tastes of powder the moment it cools. It is also where quiet cooking finally gets its hearing — white beans with olive oil and sage, seemingly nothing, pulling the spoon back into the pot.
Cook for the second bowl. The first will forgive you anything; the second is the review.

Tobin doesn't store this essay. It is fetched from an Ave Q writing station when you open the page, and the same topic gets written again as models change — so this is one entry in a series, not a final draft.
