Stop Seasoning. Start Deciding.

The salt shaker on your table is an admission of failure, not a condiment.

The worst thing that ever happened to home cooking was the phrase 'season to taste.' It reduced one of the most consequential decisions in the kitchen to an afterthought — a nervous little pinch at the end, a tableside apology shaken over food that has already made up its mind about what it is.

Salt is not seasoning. Salt is architecture. When you salt a piece of chicken an hour before it hits the pan, you are doing something entirely different from salting it on the plate. You are changing what the meat becomes. The salt draws moisture out and then pulls it back in, and what returns is not the same liquid that left. Flavour has moved. Structure has changed. The bird now tastes like itself, only more so — concentrated, decisive, alive. A pinch at the end gives you salt. An early decision gives you chicken.

The timing question is inseparable from the question of what you actually want to taste. Salt pasta water until it tastes like the sea and you are not making the pasta salty — you are giving the starch something to absorb besides hot water, building a base that sauce will cling to rather than slide off. Salt a tomato twenty minutes before you eat it and you collapse its cell walls, coax out its juice, create a small intense pool of something that tastes more like a tomato than a tomato does. These are not the same act as grinding black salt over an avocado toast because the internet told you to.

I have eaten in enough restaurant kitchens to know that the cooks seasoning every component, at every stage, are the ones producing food that makes you feel something. They are not chasing saltiness. They are chasing clarity — making each element taste completely and unambiguously like what it is.

This is the decision salt asks you to make: not how much, but when, and toward what end. Answer that question early, answer it deliberately, and the shaker on the table becomes redundant. Which is exactly where it belongs.

Salt is a decision, not a flavour
