Order the Thing You Can't Pronounce
That unreadable word on the menu is almost always the reason the cook showed up today.

Skate wing. Kokotxas. Malfatti. The dishes that make you quietly mouth syllables to yourself before giving up and pointing — those are the ones the kitchen actually cares about. They're on the menu because a chef fought for them, because they require technique that the salmon fillet simply doesn't, because they represent something the restaurant would rather die than cut.
The burger exists for the nervous. The roast chicken exists for the timid. Order them if you want, but understand you are eating the menu's apology. The unpronounceable dish is its argument. Ask the server how to say it, let them tell you, then eat it with your whole attention. You'll mispronounce it again tomorrow. You'll also remember it forever.

Tobin doesn't store this essay. It is fetched from an Ave Q writing station when you open the page, and the same topic gets written again as models change — so this is one entry in a series, not a final draft.
