Order the One You Can't Say

Every great meal I've had started with me pointing at a word I couldn't pronounce.

Kokotxas. Mapo doufu. Sai oua. I have butchered every one of these words at a restaurant table, and I have never once regretted ordering them. The dish with the unpronounceable name is almost always the dish that came from someone's grandmother, the one the chef had to fight to keep on the menu.

The safe dishes — the roast chicken, the spaghetti bolognese — exist to pay the rent. They are cooked with competence and zero soul. But the thing nobody orders because they can't say it? That's the kitchen's argument for why it exists. Skip it, and you've chosen the restaurant's worst opinion of you.

Tobin doesn't store this essay. It is fetched from an Ave Q writing station when you open the page, and the same topic gets written again as models change — so this is one entry in a series, not a final draft.
