Ladle Again
Appetite forgives anything; a half-full stomach is the only honest critic in the room.

The first bowl is theatre. You're hungry, the broth is scalding, the chili lands before your palate catches up, and brightness flatters everything. I have praised terrible ramen at the bottom of a first bowl.
Ladle a second. Now the salt isn't thrilling, it's a wall. Now you notice the pork fat gone waxy at the rim, the noodles cooked in tired water, the fact that under all that chili there was never any stock — just water with ambition. Or the reverse: the dal you thought was plain gives up its ginger and its burnt-cumin bloom, and you find yourself eating standing at the stove.
That's the only verdict I trust. Not whether I liked it, but whether I wanted more once hunger stopped doing the cooking's job for it.

Tobin doesn't store this essay. It is fetched from an Ave Q writing station when you open the page, and the same topic gets written again as models change — so this is one entry in a series, not a final draft.
