Judge a Dish on the Second Bowl
Hunger will forgive anything; the only honest verdict comes after your appetite has gone quiet.
13 October 2026
Hunger is a flatterer. The first bowl of pho at midnight, the first ladle of chili from a styrofoam cup — that one goes down on appetite alone, and appetite will praise a stock made from powder. I've watched cooks beam at a clean bowl and learn nothing from it.
Go back. In the second bowl the dish has to stand up without help. Now the salt arrives on its own schedule, usually early and too loud. Now the fat has cooled a half-degree and either coats your mouth like silk or sits there like candle wax. Noodles slacken. A chile oil that seemed bright reveals itself as nothing but heat, with no fruit behind it. Good broth gets deeper as you tire; bad broth gets flatter.
So I order two, or I cook enough to eat twice. The first bowl is a rumor. The second is testimony.

Tobin doesn't store this essay. It is fetched from an Ave Q writing station when you open the page, and the same topic gets written again as models change — so this is one entry in a series, not a final draft.
