Hunger Is a Flatterer

The first bowl is a seduction; only the second one tells you what the cook actually knows.

14 September 2026

Hunger is a flatterer. The first bowl lands on an empty stomach and a hopeful mouth, and almost anything — instant ramen at midnight, a soup thickened with too much cornstarch — will taste like a small triumph. Novelty does the rest. You're busy identifying things: star anise, burnt garlic, that squeak of good tripe.

The second bowl has no such cover. Your palate has calibrated, the salt has nowhere to hide, and the fat that seemed luxurious at 7:02 now coats your teeth like candle wax. This is where restaurants fail: the dish that dazzles once and cloys twice. It's also where great cooking shows itself — a Cantonese congee, a sour kimchi jjigae, dal with a tadka that tastes like it knows something. You finish and you want more, and the wanting isn't greed, it's recognition.

So order the second bowl. Ask for it before you write anything down.
